Vinification:

Grapes from selected family vineyards were harvested at an
appropriate maturity and after destemming were subjected to a pre-fermentative
maceration process for about 6 hours at 6-100 C temperature.


This was followed by static leaching and the must was then transferred to a vertical
oak fermentation tank (foudre) where alcoholic fermentation proceeded at controlled
temperatures of 160 C. It remained with the fine lees after the fermentation was
completed for 12 months. This was followed by removal of the lees and maturation
for another 8 months. It was bottled in April 2022.

Organoleptic characteristics:


Bright lemon color with golden highlights. The nose appears complex with delicate
aromas of yellow fruits and citrus surrounded by a distinctive oaky character and
hints of chakra stone.


In the mouth the typical Santorini minerality is evident while the relatively high
acidity gives a pleasant freshness that balances the sweetness of the alcohol. The
body is well structured and oily and incorporates the fruit (peach, citrus etc) and
saltiness along with soft vanilla and hints of toast. The aftertaste is intense and long
lasting. A wine with potential for further evolution over time.
